Great Vegan Tofu Scramble


3 T oil
1 sm. onion,chopped
1/2 red or green bell peppers, chopped
other vegetables of choice, broccoli, carrots, potato, tomato, kale etc...cut small
8 oz.mushrooms,sliced 2+ cl.garlic,minced
1 # silken soft TOFU
1/4 C Nutritional Yeast
 2 heaping T broth powder**
Salt and pepper to taste
1/4 cup bacos (optional)
Heat oil, med..

Add onions, peppers, broccolli, carrots
Saute' til thickest vegis are nearly cooked through

Add garlic and mushrooms, cook til done, and no liquid in pan.

Crumble in Tofu. Stir well

Sprinkle with yeast, broth, salt and pepper.
Mix well.
Stir in bacos.
  • **For best results I strongly recommend Fronteir brand, beefy broth powder.
  • Sliced hickory tofurky or "ham" flavored is a great addition
