VEGAN Tofu Breakfast Scramble
(no eggs no cholesterol scrambled eggs)


3 T oil

1 sm. onion,chopped

1/2 red or green bell peppers, chopped

other vegetables , broccoli, carrots, potato, tomatoe, kale etc...cut small

2+ cl.garlic,minced

8 oz.mushrooms,sliced

1 # silken soft TOFU

1/4 C Nutritional Yeast

 2 heaping T broth powder**

 1 t turmeric

Salt and pepper to taste

1/4 cup bacos


Heat oil, med..

Add onions, peppers, broccolli, carrots
Saute til thickest vegis are nearly cooked through

Add garlic and mushrooms, (splash of wine optional) cook til done, and no liquid in pan.

Crumble in Tofu. Stir well

Sprinkle with yeast, broth, turmeric, salt and pepper.
Mix well.

Stir in bacos.

Serve with  garlic salt, more nutritional yeast, and fresh ground pepper.

  • **For best results I strongly recommend Fronteir brand, beefy broth powder.
  • Sliced hickory tofurky or "ham" flavored is a great addition
