Vegan Chinese Almond cookie
Chinese Almond cookies
- 1 cup shortening
- Cut into mixed:
- l/4 tsp. salt
- 3 cups flour
- l tsp. baking soda
- Mix all
- 1/4 C soymilk
- l cup sugar
- 2 tsp. almond extract
- Form into balls the size of a walnut.
- Flatten slightly with hand and place on cookie sheet.
- Make a dent in the center of each cookie with the blunt end of a chop stick.
- Drop red food coloring (opt) (traditional, but not necessary) onto dent
- OR
- Press blanched almond on cookie instead of dent & coloring.
- Bake at 350 for l0 to l5 minutes....
