Vegan Chinese Almond cookie


Chinese Almond cookies

  • 1 cup shortening
  • Cut into mixed:
  • l/4 tsp. salt
  • 3 cups flour
  • l tsp. baking soda
  • Mix all
  • 1/4 C soymilk
  • l cup sugar
  • 2 tsp. almond extract
  • Form into balls the size of a walnut.
  • Flatten slightly with hand and place on cookie sheet.
  • Make a dent in the center of each cookie with the blunt end of a chop stick.
  • Drop red food coloring (opt) (traditional, but not necessary) onto dent
  • OR
  • Press blanched almond on cookie instead of dent & coloring.
  • Bake at 350 for l0 to l5 minutes....
