Cholesterol free CARROT CAKE

Carrot cake ingredients

¼ C + 2 T soymilk

¾ c oil

1 c sugar

1 t vanilla


1 C flour

1/4 c ground oats

½ teaspoon baking soda

½ t salt


4 oz flakes coconut

1 c shredded carrot

4 oz crushed pineapple

1 c chopped pecans (opt)



Carrot Cake directions

Mix wet ingredients.

Mix dry.

Gently mix together and fold in remaining ingredients.

Pour into square or round cake pan.

Bake:  350 around 35-40 min


Very moist cake so you don't need frosting, but if you like, mix powdered sugar with a little soymilk or pineapple juice and drizzle over. Sprinkle with nuts to be even fancier...


Double ingredients for 10 x 13 pan. and increase time to 45-50 min
