5 large potatoes cubed, cook until
done, but still firm. Cool.
Mix with:
1/4 c onion chopped
2 T pimentos chopped
1/4 C celery chopped
8 oz extra firm tofu, cubed.
(Mixed with 1 t turmeric and 1 T
nutritional yeast optional)
1 1/4 C
vegan mayonnaise
2 t prepared mustard
1/4 t celery seed
1 t salt
1/2 t pepper
