Traditional Tabbouleh (Cracked wheat salad)


Pour boiling water over 2 C cracked wheat and let sit 1-2 hours
Drain and squeeze well
Mix with:
1 ½ C chopped green onions
2 t salt
1 t pepper
2 C parsley
¾ C cherry tomatoes
1 C olive oil
1 C lemon juice
1/4 C mint leaves

Chill well, overnight is best.
Serve on lettuce leaves.
