Peanut Vegi Sandwich Spread
 
1 c shredded cabbage
1 c shredded carrots
1 c ground peanuts (or crunchy peanut butter)
¼ c onion chopped
½ green pepper chopped (optional)
1/2 t salt
3 T vegan mayonaise

TIPS
Add fresh mung bean sprouts.
substitute 2 t soy sauce for the salt
and add 2 t finely chopped gingerroot or 1/2 t ground ginger
for a great asian style taste!
