Classic Homemade VEGAN French Market Soup


2 C mixed beans, rinsed


1 ½ pound can diced tomatoes

1 onion, diced

1 green pepper, diced

1 C celery with leaves, chopped

3 garlic cloves, minced

1 T lemon juice

1 T sugar

2 T A1 or vegan worcestershire

Salt to taste

Fresh ground pepper



Soak beans in water overnight.

Rinse, cover with water. Boil 2 hours. Add more water as necessary.

Add remaining ingredients

Boil/simmer 1-2 hours

Optional: Use a couple cans of cooked beans,if you are in a hurry, then skip the overnight soaking, and just cook 1-2 hours total.

Toss in a handful or two of spinach, or other green for more nutrition
