Cholesterol Free Vegan Recipe

Basic wild rice
1 c wild rice
3 c water
1 ½ t salt
1 t vinegar
Boil simmer 45 min
Drain excess water.
 
 

Wild rice casserole
1 c wild rice rinse
½ # mushrooms
3 T onions
½ c sliced almonds
3 c broth
Combine all in 2 qt casserole
Dot W/
¼ c butter
Bake 325 90 min
Wild Rice and mushrooms
Boil:
3 oz mushrooms use liquid
add water to = 2 c
2 t vegi broth powder
2 onions
Add
½ c wild rice
cover boil simmer 20 min
Add
1 c rice
cover boil simmer 20 min
Toss w/
2 T butter
2 T parsley

Wild Rice and Pasta
* 1 cup wild rice (soak overnight and cook, about 45 minutes)
* 1 cup orzo pasta, cooked according to package directions

Saute:
* 1 Tbsp oil
* 2-3 garlic cloves, minced
* 1 medium onion, chopped * 10 large mushrooms, chopped
Add:
* 1 Tbsp. soy sauce
* 1 Tbsp. lemon juice
Mix all ingredients and season with salt and pepper.

Prior to serving mix in 2 Tbsp. chopped parsley.
