Vegan Classic Shortbread
Classic Shortbread
- Cream
- ½ lb vegan shortening
- ½ c powdered sugar
- 1 t vanilla or almond flavor
- Mix dry then add to creamed
- 2 c minus 2 T flour
- 1/3 c cornstarch
- form 2 flattened plate size cookies, 1/2 " thick
- crimp edges with fork
- prick fork through cookie where to be cut
- decorate with colored sugar or sliced almonds (optional)
- chill 15 min
- 325 25-30 min until set but not brown
Moms Basic Shortbread
- Cream together
- 1 ½ c vegan margarine
- ½ c sugar
- 4 c flour
- roll out on cookie sheet ½ " thick
- prick with fork through dough where you want to cut it.
- (Triangles or squares next to each other work best)
- Bake 350 20-25 min until set not dark
cookie stamp shortbread
- Cream together
- 1 c vegan shortening
- ¾ c br sugar
- add:
- 2 ¼ c flour
- form 1 " balls
- roll in sugar
- 2 " apart flatten w/ press ¼ " thick
- 350 10-12 min
Shortbread Dreams
- Cream together
- 1 ¼ c flour
- ¼ c cornstarch
- ½ c powdered sugar
- ¾ c + 2 T vegan margarine
- 1 t almond, vanilla, or orange flavor (optional)
- Form 1 " balls
- flatten with sugared glass bottom
- Bake 300 15 min
- sprinkle with powdered sugar

Tips and ideas:
Mom would make a shortbread christmas tree every year.
She would double the recipe, split in 2, then color 1/2 green and 1/2 blue green, then cut out different size circles, bake, then pile them up.
Sprinkle with a little colored sanding sugar / sparkling sugar for sparkle
