Vegan Chocolate Espresso MOCHA cookies
Chocolate Espresso MOCHA cookies
- Cream
- 2 c vegan margarine
- 2 C powdered sugar
- 2 t vanilla
- Mix dry then add to creamed
- 3 c flour
- 1 c cocoa
- 1 T ground fine espresso beans (or 1/2 t instant)
- Form small balls or press like shortbread
- Roll in cocoa or powdered sugar (optional)
- Bake 350 10-12 minutes

Tips and ideas:
Double the coffee beans or powder for more coffee flavor
