Classic Russian Teacakes
Moms white Mice/Russian Tea Cakes
- Cream
- 1 c margarine
- 1/2 c powdered sugar
- ¼ t vanilla
- ½ t almond (opt)
- Mix all
- 2 C cake flour
- ½ c finely chopped pecans
- shape into small 1 "balls or oblong mice
- Bake 300 15-20, or 350 14 minutes
- remove and roll in Powdered sugar
Tips and ideas:
- Put a chocolate piece or other surprise in center of balls
- Roll in color sugar
- Use 1 c coconut in place of nuts

Russian Teacakes
- Cream
- 1 c vegan margarine
- ½ c powdered sugar
- 1 t vanilla
- Mix dry then add to creamed
- 2 ¼ c flour
- ¼ t salt
- ¾ c ch nuts
- form 1" balls
- bake 400 10-12 min
- roll in powdered sugar

Tips and ideas:
Use 1 c shredded coconut and 1 T orange peel in place of the nuts
