Chocolate Pudding
CLASSIC Chocolate pudding
- Mix in saucepan
- 2/3 cup sugar
- 1/4 C unsweetened cocoa
- 2 T Corn Starch
- 1/4 teaspoon salt
- Add
- 2 cups milk
- Bring to a boil, stirring constantly
- Boil 1 minute
- Remove from heat
- Add
- 2 tablespoons butter
- 1 teaspoon pure vanilla extract
Stir in vegan chocolate chips, early if you want them to melt for a richer pudding, or after it cools a little to leave chips
Chocolate Pudding with tofu
(No cooking necessary)
- 1 10 1/2-oz package silken tofu
- 2 /3 C sugar
- 1/3 C unsweetened cocoa powder
- 2 t vanilla extract
- pinch of salt
- Place all the ingredients in a food processor fitted with a metal blade and process until smooth, creamy, and thick. Chill in the refrigerator until serving time.
