Classic CARROT CAKE
CARROT CAKE
- Mix wet ingredients.
- ¼ C + 2 T soymilk
- ¾ c oil
- 1 c sugar
- 1 t vanilla
- Mix dry.
- 1 C flour
- 1/4 c ground oats
- ½ teaspoon baking soda
- ½ t salt
- Gently mix together and fold in remaining ingredients.
- 4 oz flakes coconut
- 1 c shredded carrot
- 4 oz crushed pineapple
- 1 c chopped pecans (opt)
- Pour into square or round cake pan.
- Bake: 350 around 35-40 min
Tips and ideas:
Very moist cake so you don't need frosting, but if you like, mix powdered sugar with a little soymilk or pineapple juice and drizzle over. Sprinkle with nuts to be even fancier.
Double ingredients for 10 x 13 pan. and increase time to 45-50 min
