Classic CARROT CAKE


CARROT CAKE

  • Mix wet ingredients.
  • ¼ C + 2 T soymilk
  • ¾ c oil
  • 1 c sugar
  • 1 t vanilla
  • Mix dry.
  • 1 C flour
  • 1/4 c ground oats
  • ½ teaspoon baking soda
  • ½ t salt
  • Gently mix together and fold in remaining ingredients.
  • 4 oz flakes coconut
  • 1 c shredded carrot
  • 4 oz crushed pineapple
  • 1 c chopped pecans (opt)
  • Pour into square or round cake pan.
  • Bake: 350 around 35-40 min

Tips and ideas:

Very moist cake so you don't need frosting, but if you like, mix powdered sugar with a little soymilk or pineapple juice and drizzle over. Sprinkle with nuts to be even fancier.


Double ingredients for 10 x 13 pan. and increase time to 45-50 min
