Fried Hand Pies


Fried Pies

Makes around 10

Fruit Filling:

  • Combine in saucepan:
  • ½ C sugar
  • 1 T cornstarch
  • ½ C water
  • 2 C fresh or frozen berries, or apples
  • Bring to a boil, and boil 2 minutes.
  • Remove and cool.

Dough

  • Combine:
  • ½ C oil
  • 1/3 C plain soymilk
  • 2 t vinegar
  • Mix dry ingredients:
  • 2 C flour
  • ¼ t baking soda
  • ¼ t salt
  • Add to wet
  • Roll Flat, 1/8 Inch thick
  • Cut into 4 ½ inch circles.
  • Spoon 1 T of filling into center.
  • Fold over.
  • Seal edges with a fork
  • Fry in hot oil ¼ -1/2 inch deep
  • Fry both sides about 1 ½ minutes each until golden
