Macaroni and Cheese

Cook 1# elbow macaroni as directed

  • Melt in pan
  • 6-8 T Margarine
  • Stir in
  • 1/4 cup flour
  • Add
  • 4 cups Unsweetened plain soymilk (ONLY soybeans and water on label)
  • Stir until heated and thickens
  • Remove and add:
  • 1 teaspoon salt (or garlic salt)
  • 1/2 t black pepper
  • 2 T broth powder (Frontier brand or 2 knorr vegi broth cubes)
  • 1 C Nutritional Yeast
  • 2 t (or more) white miso (Optional, but gives it a richer flavor)

Tips and ideas:

  • Serve with vegan parmesan or nutritional yeast, and a pepper grinder.
  • There are a lot of amazing vegan cheeses out there now. Grate one of them, OR a vegan cream cheese, into the sauce and on top when serving, for a richer flavor, if you can afford them!
  • Cashew cream is popular now too, in place of soy milk. Just soak cashews overnight in water, and blender smooth.
  • The broth powder is very important. Some broths add spices and other flavors. Choose one you know you like or the ones mentioned.
  • Add a little more soy milk if too thick
  • Season to taste, of course
