Citrus Sauces
Recipes.
Lemon lime Citrus Dip & marinade
- 1 C broth
- 1/2 C wine
- 1 C OJ
- 2 T lemon juice
- 1 T lime
- 2 T sesame oil
- 1 t thyme
- 1 t margoram
- 1 t ginger
- 2 t agave nector or 1 T sugar
- s & p
- Boil/simmer 20 minutes
Lemon Soy dip
- 1/2 C soy sauce
- 1/4 C lemon juice
- 2 T rice vinegar
- 2 T H2O
- 1 T ground seaweed (optional) (good for a fake fish dip)
dijan Orange marmalade dip/sauce
- 2 T orange marmalade
- 1 1/2 T rice vinegar
- 1 T dijan mustard
- 1 t soy sauce
- 1/2 t ginger
Spiced Garlic Citrus dipping sauce or marinade
- 1 C olive oil
- ¾ C lime juice
- ¾ C orange juice
- ½ C cilantro
- 8 cloves garlic minced
- 1 T grated orange peel
- 1 T oregano
- 1 T cumin
- 1 ½ T salt
- 1 ½ t pepper
- Reduce slightly for marinade, more for sauce
Orange and Soy Sauce
- Boil /Simmer until sugar is dissolved
- 1 1/4 C orange juice
- 1/4 C lemon juice
- 1/2 C soy sauce
- 2 T sugar
- 2 T fresh ginger
- 1 T minced garlic
- 1/2 t pepper
chili Orange sauce
- ¼ C Orange juice
- ¼ C chili sauce
- 1 T sugar
- 2 T soy sauce
- 1 T oil
- ½ t chili powder
- ¼ t garlic powder
Orange wine sauce
- 1 T orange peel
- 1 C OJ
- 1 C white wine
- 3 T agave
- 1 T ginger root
- 1 T oil
- ¼ c broth
- 1 T soy sauce
- Heat to reduce, 30 min.
Traditional Orange tofu Luck
- Dissolve/ boil amber color
- brushing sides with wet pastry brush
- ¼ C sugar
- 2 T water
- Add:
- 2 T sherry vinegar
- 1 ½ C orange juice
- 2 shallots
- Reduce to ½ C around 15 minutes
- Add:
- 1 ½ C veg broth
- 4 sliced oranges
- Boil/reduce to ¾ C
- Cover sliced/pressed tofu, and bake 30 min. Flip and bake 20 min more.
- Can grill after baking, 3-5 min side
Orange gravy
- 3 C vegi broth
- 1 T fresh rosemary
- 5 T frozen oj concentrate
- heat and thicken w 2 T cornstarch in 1/4 C water
Tips and ideas:
Most sauces you heat to blend flavors, and cool before serving
If you want a dip or thick sauce, then heat it longer. Marinades are more liquid so do not heat as long
