Orange holiday glaze
- Heat 6 oz frozen concentrated OJ with
- 2 T agave syrup
- 1 t ginger
- 1 t salt
- 1/4 t ground cloves
- Bring to a boil and cook 3 minutes
Orange Glaze
- 1/3 C orange marmalade
- 1 T mustard powder or wasabi
- 2 t soy sauce
- 2 t lemon juice
Special Orange balsamic glaze
- Saute 5 minutes
- 1 ½ T vegan butter or margarine
- 1 C ch shallots
- Add: boil /reduce 25 minutes
- 1 C oj concentrate
- ½ C water
- ½ C orange marmalade
- ½ C balsamic vinegar
- 1 T salt
- ½ t pepper
- 1 ½ t orange rind
Cranberry Glaze
- 8 oz jellied cranberry sauce
- 1/4 C brown sugar
- 1 t prepared mustard
Cherry glaze
- Heat together:
- ¼ C cherry preserves
- ¼ C cranberry juice cocktail
- ½ T cornstarch
- 1 t soysauce
- ½ t finely grated orange peel
Currant mustard Glaze
- Heat until melted :
- 10 oz currant jelly
- 1/4 C prepared mustard
- 1/2 t onion powder
- 1/2 t salt
Citrus Glaze
- 1 C OJ
- ½ C grapefruit juice
- ¼ C lime juice
- ¼ C broth
- 3 garlic
- 2 T corn syrup
- 2 T sugar
- ½ t pepper
- Boil above until reduced to 1 C
- Add:
- ¼ C oil
Tips and ideas:
Glazes are usually packed with flavor and brushed or spooned onto tofu, or seitan, or? for a great added flavor.
