- Take the white flesh from a fresh coconut.
- Slice it very thinly with a potato peeler
- Spread thinly on a cookie sheet
- Sprinkle with a little salt
- Bake: 250 45-60 til lightly browned.
- Watch close. Coconut burns easily
Hawaiian Coconut Candy
- 1 coconut
- 3/4 cup water
- 1 1/2 cups sugar
- Slice coconut into strips with a vegetable peeler.
- Combine all ingredients in a pan.
- Boil for 20 to 30 minutes stirring frequently until water evaporates.
- Pour onto a large baking sheet.
- Separate strips with a fork and let cool.
- Bake:250 until lightly browned.
- Cool

Tips and ideas:
Opening a Coconut
- Hammer a large clean screwdriver into each of the "eyes"
- Drain the liquid water.
- Place the whole coconut in a 350-400 degree oven for 15-20 minutes, which helps loosen the flesh
- Remove and cool enough to handle.
- Wrap in a clean towel and hammer until you can easily remove the flesh from the shell
Some people just whack the whole coconut with the back of large cleaver around the center until it cracks in half.
