Favorite onion Soups


FRENCH ONION Soup

  • 1-3 onions sliced very thin
  • 2 T oil
  • 2 T vegan margarine
  • 1 C sherry
  • 2 T flour
  • 3 C water
  • 2 T Vegetable broth powder (Frontier Brand, beefy broth)
  • 1 Bay leaf
  • ½ t thyme
  • ½ t salt
  • 1 t rosemary
  • 1 t basil
  • pepper
  • Vegan Worcestershire to taste
  • Cook onions in oil and margarine
  • Start on high for 2 minutes then turn low for 30 minutes, adding sherry every few minutes until reduced completely, and onions caramelized
  • Stir in flour.
  • Add remaining
  • Heat through.
  • Top with croutons, or toasted french bread and vegan cheese.
  • Broil until cheese melts or is light brown

Traditionally French onion soup is served topped with a slice of toasted French bread with a Gruyère or swiss cheese on top. There are a lot of great vegan cheeses out there, so you should be able to find a great one!

Tips and ideas:

ONLY use a broth you know and like! Frontier brand, or knorr vegi broth cubes are my favorite. They add umami, but not spice!
