Red Chowder Recipe

Manhatten style Red Chowder
¼ C olive oil
1 onion chopped
3 cloves chopped garlic
3 potatoes cubed
1 carrot sliced
2 T parsley
1 red bell pepper chopped
2 T dry mash potatoes
1 t thyme
1 t pepper
1 t salt
1 bay leaf
2 t oregano
1 t basil
16 oz crushed tomatoes
2 C tomato juice
dash cayenne
1 piece kombu crumbled
1 Box extra firm tofu cubed
 
Heat all to a boil
Simmer 1 - 2 hours
 
Stir in 1 T lemon Juice
1 C wine
Heat
Season to taste
