- Shitake
spinach soup
- Soak 8 large
shitake caps in hot water 30
minutes.
- Strain water
through fine mesh adding more water to
equal 7 cups
- Add to water and
mushrooms:
- 2 T broth
powder
- ½ t
basil
- ½ t garlic
powder
- 1 t lemon
juice
- Boil simmer 10
minutes
- salt or soy
sauce to taste.
- Stir in 1 ½
C fresh spinach
