White Bisque with Tofu Recipe

White Bisque with Tofu

  • Saute'
  • ½ C margarine
  • 2 2/3 C chopped onion
  • 1/3 C celery
  • 1 T minced garlic
  • Add 1/2 C flour. Cook stir 3 minutes
  • Add:
  • 4 C water
  • 4 C plain soymilk (just soybeans and water on label)
  • 2 Bay leaves
  • 2 T parsley
  • 1 ½ t salt
  • 1 t pepper
  • 1 T vegan worcestershire
  • ½ t thyme
  • ½ t celery seed
  • 2 drops Tabasco
  • 1 piece kombu
  • Boil Simmer 20 minutes
  • Add:
  • 1 Can crushed tomatoes
  • 3-4 C sliced or crumbled prebaked tofu
  • 1 C white wine
  • Heat 5 minutes

Tips and ideas:

You can use frozen thawed squeezed crumbled tofu, instead of the baked, but add it to the onions in the beginning to fry up a little
