White Bisque with Tofu Recipe
White Bisque with Tofu
- Saute'
- ½ C margarine
- 2 2/3 C chopped onion
- 1/3 C celery
- 1 T minced garlic
- Add 1/2 C flour. Cook stir 3 minutes
- Add:
- 4 C water
- 4 C plain soymilk (just soybeans and water on label)
- 2 Bay leaves
- 2 T parsley
- 1 ½ t salt
- 1 t pepper
- 1 T vegan worcestershire
- ½ t thyme
- ½ t celery seed
- 2 drops Tabasco
- 1 piece kombu
- Boil Simmer 20 minutes
- Add:
- 1 Can crushed tomatoes
- 3-4 C sliced or crumbled prebaked tofu
- 1 C white wine
- Heat 5 minutes

Tips and ideas:
You can use frozen thawed squeezed crumbled tofu, instead of the baked, but add it to the onions in the beginning to fry up a little
