Perfect Potato Pancakes!
Place in Blender:
4 C diced potatoes
3 oz tofu
1/4 C soymilk (only soybeans and water
on label)
1 T crisco
1 small onion
2 T flour
1 t salt
Blend just until all go through the
blades.
Heat flat skillet
add a couple T oil.
When almost smoky hot, spoon 2 T potato
mixture and spread very thin.
When top is dry flip over and brown
other side.
These are awesome!
I like them topped with vegan margarine
and sprinkled with sugar!
Dad likes them with Vegan Margarine and
salt and pepper.
Mom likes them with maple
syrup...

- Baked Tofu
Potato Latkes

- * 1 cup firm
tofu
- * 2 T oil
- * 2 T cup water
- * 4 cups grated
raw potatoes,
- * 3/4 cup grated
onion
* 2 cloves garlic
* 2 T fresh parsley
- * 1 tsp salt
- * 1/2 tsp garlic
powder
- * 1/4 cup
blendered oats
- * 2 t onion
powder
- * 1 T
Nutritional yeast
Blend tofu, oil,
and water until smooth.
Add remaining
ingredients and mix well. Drop 1/2 cup
portions on to oiled cookie sheet and
flatten. Bake at 400 F for 15 mins.
Turn and bake until browned, about
10-15 mins more.
