Basic Cooked Wild Rice

  • 1 c wild rice, rinsed
  • 3 c water
  • 1 ½ t salt
  • 1 t vinegar
  • Boil simmer 45 min
  • Drain excess water.

Wild rice casserole

  • 1 c wild rice, rinsed
  • ½ # sliced mushrooms
  • 3 T chopped onions
  • ½ c sliced almonds
  • 3 c heated vegi broth
  • Combine all in 2 qt casserole
  • Dot W/
  • ¼ c vegan butter or margarine
  • Bake 325 90 min

Wild Rice and Orzo Pasta

  • 1 cup wild rice, rinsed (soak overnight and cook, about 45 minutes)
  • 1 cup orzo pasta, cooked according to package directions
  • Saute:
  • 2 Tbsp oil
  • 2-3 garlic cloves, minced
  • 1 medium onion, chopped * 10 large mushrooms, chopped
  • Add:
  • 1 Tbsp. soy sauce
  • 1 Tbsp. lemon juice
  • Mix all ingredients and season with salt and pepper.
  • Prior to serving mix in 2 Tbsp. chopped parsley.


Favorite Wild Rice and mushrooms

  • Bring to a Boil:
  • 3 oz can mushrooms with liquid
  • add water to = 2 c
  • 2 t vegi broth powder
  • 2 ch onions
  • Add
  • ½ c wild rice, rinsed
  • cover boil simmer 20 min
  • Add
  • 1 c white rice
  • cover boil simmer 20 min
  • Toss w/
  • 2 T butter
  • 2 T parsley
