Wild Rice Recipes
Basic Cooked Wild Rice
- 1 c wild rice, rinsed
- 3 c water
- 1 ½ t salt
- 1 t vinegar
- Boil simmer 45 min
- Drain excess water.
Wild rice casserole
- 1 c wild rice, rinsed
- ½ # sliced mushrooms
- 3 T chopped onions
- ½ c sliced almonds
- 3 c heated vegi broth
- Combine all in 2 qt casserole
- Dot W/
- ¼ c vegan butter or margarine
- Bake 325 90 min
Wild Rice and Orzo Pasta
- 1 cup wild rice, rinsed (soak overnight and cook, about 45 minutes)
- 1 cup orzo pasta, cooked according to package directions
- Saute:
- 2 Tbsp oil
- 2-3 garlic cloves, minced
- 1 medium onion, chopped * 10 large mushrooms, chopped
- Add:
- 1 Tbsp. soy sauce
- 1 Tbsp. lemon juice
- Mix all ingredients and season with salt and pepper.
- Prior to serving mix in 2 Tbsp. chopped parsley.
Favorite Wild Rice and mushrooms
- Bring to a Boil:
- 3 oz can mushrooms with liquid
- add water to = 2 c
- 2 t vegi broth powder
- 2 ch onions
- Add
- ½ c wild rice, rinsed
- cover boil simmer 20 min
- Add
- 1 c white rice
- cover boil simmer 20 min
- Toss w/
- 2 T butter
- 2 T parsley
