Vegan recipe for Muffalettas

Muffalettas Recipes.

Make the marinated vegis the day before



Traditional Muffaletta Sandwich Bread

Bread Ingredients

  • 1/2 c blendered oats
  • 1/2 c cornmeal
  • 1/2 c water
  • 1/2 c oil
  • 2 T ground flax
  • 1 T minced onion
  • 1 t yeast in 1/4 c warm water
  • 3/4 c plain soymilk (only soybeans and water on label)
  • 1 T sugar
  • 1 t salt
  • 2+c flour
  • ---------------
  • 1 t garlic salt
  • t minced onion
  • 1 T sesame seeds

Make Bread: Best to use the day you make it

  • Soak oats and cornmeal in water 15 minutes.
  • Add remaining ingredients.
  • Mix in enough flour for a stiff dough.
  • Spread onto greased pizza plate.
  • Rise
  • Brush with oil
  • Sprinkle with 1 t garlic salt, 1 t minced onions,
  • 1 T sesame seeds.
  • Bake 350 25-30 minutes.

  • Cool. Slice in half.
  • Spread with marinated vegis.




Marinated Vegis

Mince and Marinate all overnight.

  • 1/3 c olive oil
  • 1/2 c bl olives
  • 1/4 c green olives
  • 1/2 c cauliflower
  • 1/2 c carrot
  • 1/2 c celery
  • 2 T red wine vinegar
  • 2 T parsley
  • 1 T garlic
  • 1/2 t oregano
  • 1/2 t pepper
  • 2 T capers (opt)

Top vegis with:

  • vegan cheese slices
  • vegan meats slices
  • mushrooms
  • peppers
  • tomatoes
  • lettuce
  • etc...
  • slice pie like
  • serve w/ extra mustard/pickles/Italian dressing

Tips and ideas:

You can skip the cheese and vegan meats and just use a slice of tofu. Fry it til light brown on both sides. Dip in nutritional yeast before setting on vegis.

You can also use a simple olive tepenade instead of the homemade marinated vegis, if you are in a hurry, or prefer... Both ways are awesome!
